Stir Fry Scallion Noodles


Take out stir fry noodles are so scrumptious and hit the spot. Making stir fry noodles couldn't get any easier and I do it all the time when I'm in a time crunch for a quick easy meal. These stir fry scallion noodles come together in just 15 minutes or less! Noodles go into a hot pan or wok and you stir fry in garlic, scallion, and stir fry sauce. Yum!

gather your ingredients

  • stir fry noodles
  • can use lo mein, chow mein, or udon.
  • scallions
  • stir fry sauce
  • sweet soy sauce, dark soy sauce, regular soy sauce, and vinegar.
  • high smoke point oil (I used avocado oil)
  • fresh garlic

Stir Fry Scallion Noodles

Ingredients  

  • 12 oz Stir fry noodles
  • 3 cloves Garlic, minced
  • 1 tbsp Dark soy sauce
  • 7 stalks Scallions, cut into 2-inch pieces
  • 1 tbsp Regular soy sauce
  • 1/2 tbsp Sweet soy sauce
  • avocado oil, enough to cover the pan

Instructions 

  • In a small pot, bring water to a boil. Drop in the noodles and cook according to the package instruction. Drain and set aside once cooked. Alternatively, you can boil the noodles while prepping other ingredients so they can go right into the pan to stir fry. Cooking the noodles and setting aside can cause them to clump together.
  • Combine all the sauces to make a stir fry sauce. Set aside.
  • In a medium frying pan, generously add in oil and bring to a medium-high heat. Once hot, throw in garlic and saute until fragrant. Add in scallions and stir fry for 1 minute.
  • Lower the heat to medium then add in noodles and sauce. Continue to stir fry for another minute. Turn off the heat.
  • Enjoy as is or add toppings like fried eggs, sriracha, or chili oil.
