Ingredients  

Meatballs

  • 2 lbs Ground chicken or turkey (85% lean)
  • 2 tbsp Garlic powder
  • 2 tbsp Onion powder
  • 1/2 tbsp Smoke paprika
  • Bunch Fresh dill, minced
  • Bunch Fresh mint, miced
  • 1 Lemon, squeeze
  • 1/4 cup Olive oil
  • 2 tsp Salt

Roasted Vegetables

  • 1 lbs Fingerling potatoes or baby potatoes, halves
  • Handful Kale
  • 1 lbs Broccoli florets
  • 1 can Chickpeas
  • 1 tbsp Cumin
  • 1 tsp Nutmeg
  • 1/3 cup Olive oil
  • salt and pepper

Tzatziki Sauce

  • 1 cup Plain yogurt
  • 1/2 Lemon, squeeze
  • 2 tbsp Fresh dill
  • 1/2 cup Grated cucumber
  • 1-2 clove Clove garlic, grated
  • 1/2 tsp Salt

Instructions 

  • Preheat the oven to 450℉.
    In a large sheet pan, lay the vegetables and chickpeas evenly into one layer. Make sure fingerling potatoes are halved or if using russet potatoes, cut them into small cubes to ensure they cook thoroughly
  • Generously drizzle the vegetables with 1/3 cup or more of olive oil. Season the vegetables with nutmeg, cumin, salt and pepper. Toss together then bake for 15 minutes.
  • Meanwhile, prepare the meatballs in a large bowl. Combine ground turkey or chicken with all ingredients; garlic powder, onion powder, smoke paprika, olive oil, minced dill and mint, salt and pepper, and lemon squeezed.
    Mix all the ingredients real well with your hands and shape the meatballs into a medium size servings.
  • Take the sheet pan out of the oven and place the meatballs on top of the vegetable layer. Pop the sheet pan back in the oven and continue to bake for 20 minutes.

Tzatziki Sauce

  • In a medium size mixing bowl, combine yogurt, minced dill, grated cucumber, grated garlic clove, salt, and 1/2 lemon squeeze. Drizzle some oil on top (optional).
  • Assemble everything in a bowl. Drizzle the tzatziki sauce on top and enjoy with some pita bread.
