Strawberry Ricotta Bruschetta
Fresh strawberry and creamy ricotta cheese, the perfect summer mash up I was not expecting to love!
No better way to welcome sweet summer time than this yummy strawberry snack. The strawberries are tossed in balsamic vinegar, olive oil, garlic, and chopped basil topped on a bed of ricotta toast. Trust me on this, this combination is seriously delicious.
Perfect for a poolside treat, hangout snack, first course, or even a quick mid-day snack.
Another reason to make this strawberry bruschetta is that it only 20 minutes to prepare and assemble. If you're a snacker like me, finding a yummy snack that isn't boring is not that easy! I'm quite tired of the typical hummus and pita chips or carrots and dip so this is such a nice breath of fresh air to my taste buds. It's also a great way to get some fresh fruit into your diet.

An excuse to get out and pick-your-own strawberries
When fruit is in season I love to go out and pick it fresh. Fresh picked fruit is so sweet and juicy! It is so much sweeter and more flavorful than what you get at the store. I ended up picking $60 worth of strawberries and didn't know what to do with all of them. Even after munching on a bunch and making strawberry short cake I still had so many strawberries left. That's when I got the idea of making bruschetta and substituting tomatoes with strawberries for a sweeter fruitier take on bruschetta, and adding ricotta cheese to make this bruschetta sweet and creamy. I hope you enjoy it as much as I do!
Strawberry Ricotta Bruschetta
Fresh sweet strawberries tossed in basil, garlic, olive oil, and balsamic vinegar on a bed of creamy ricotta toast.
Ingredients
- 1 cup fresh strawberries or handful
- 6 slices of baguettes
- ½ cup ricotta cheese full fat
- 2 tbsp balsamic vinegar
- 4 tbsp olive oil extra virgin
- pinch of salt and pepper
- 1 stem Italian basil
- 1 clove garlic
Instructions
- In a large pan, drizzle 2 TBSP of olive oil into the pan and toast the sliced baguettes for 3 minutes on medium heat or until golden brown and crispy. I toast mine on a cast iron pan.
- While the baguettes are toasting, prepare the strawberry topping. Mince the garlic, dice up strawberries, and chop basil leaves. Combine in a bowl.
- Drizzle the remaining olive oil, balsamic vinegar, cracked black pepper and salt into the bowl with the strawberries. Toss together.
- Transfer the toast onto a plate and spread ricotta cheese generously. Can use more or less! Spoon the strawberry salad onto toasts. Enjoy!
